Affecting an estimated 2.4 million Americans, celiac disease is significantly more common than inflammatory bowel disease and is associated with acute gastrointestinal symptoms, malnutrition, and increased mortality. The disease is currently treated by a gluten-free diet, which is costly and challenging to maintain strict compliance.
